Copper Mine


Every now and again the starts align and Adam & I have a night together. Lately it’s been the middle of the week when we are both worn out from work and everything else going on, so we prefer a night in. A Home cooked meal-catching up on our favorite shows together. So romantic, I know. 

So when we had a Friday night we decided it was time to go on an ACTUAL date!!! So a while back we decided it was time to see the Kennecott Copper Mine. Rio Tinto and Kennecott advertise the heck out of this place- have you seen their low emissions commercials? Since we attended the Real game on the 4th of July, we got free admission for one car. So we headed up after I got of work.
 
Driving out to the mine was fun. We had a chance to just talk, sing along to our favorite songs and have some down time. When we got there we were SHOCKED at how much property Kennecott owns & even more shocked to learn that it stretched up to salt lake, and down to the point of the mountain and then west all the way to tooele. THAT IS A LOT of land. 

The “Pit” where they dig is HUGE! And reminded me of our trip to Waimea canyon in Hawaii.

It is CRAZY to think that they have been digging there for hundreds of years.
CRAZIER to think they can dig for Hundreds more and still find copper.
& more shocking when you think how big this pit could get.
ALL that PINK could be an open pit mine some day. 

After we stared into the pit, walked through the museum, and felt a little guilty about the giant hole that is being dug into mother earth, we soothed our conscience by going out to dinner. There have been so many Ethiopian restaurants opening in Salt Lake we decided it was time to try a new one. 

We decided to head to Blue Nile for dinner. It is a VERY foreigner friendly Ethiopian restaurant. They have all American wait staff who will attempt to educate you on the menu, Ethiopian cuisine and some cultural tips here and there. If you are an Ethiopian Native, don’t ask for mitmita- they won’t know what it is. THERE are two Ethiopians in the back cooking which made Adam feel better about the place. 

We went with our usual- tibs and doro wat & because theMR. tries it at every new restaurant, and order of kitfo lub lub. Oh how we LOVE habehsa food! Sooooo delicious. 

It was such a fun night! I love having time with my sweetie & exploring our great state!

Summer LOVIN'

Things I LOVE about summer

This summer has been particularly lazy. Since we live almost pool side, there really isn’t a reason to leave much. We have Central AC which is a HUGE step up from our kitchen window unit of last summer. AND we have a DVR. So we kind of have to FORCE ourselves to get out there.

So every now and again we go on a mini adventure!



We found our F'REAL milkshake making miracle in the Chevron nearby. Even though my iPHONE GPS tried to take us out in to an empty field to kill us. We were excited to see it, and try it & LOVE IT!!!!

SO yummy. 
So Creamy.
SO DELICIOUS!

PLUS it’s a cheap night out! Totally worth the $5. If you haven’t found a F’real machine in your neighborhood yet, FIND ONE NOW!!!!!

Ashtynn's special day!

It is hard to believe that Ashtynn turned 8!
I remember the day she was born like it was yesterday. 

I was living in the Avenues as a semi-squatter with Dareth. At that point in time I had taken control of the loft bedroom with the big bed. My parents called me from the waiting room. They were down in St. George standing outside the door with Morgan just WAITING to meet our first little niece. My mom was funny because Jessica was laughing, and she had never heard someone laughing at the birth of their child!

Over the last 8 years she has grown up so much, and now is a little lady in training. On June 30, 2012 she was baptized a member of our Church. It was an amazing day for sure! Can you tell by the smile on her face that she was excited?



Dear Ashtynn,

We are sooooo proud of you. You have grown so much these last few years. You are a big sister TWICE, a daughter, a niece and a great friend. It was been amazing to watch you grow in patience as you help you mom and you sisters. It has been fun to see your little personality come to life as you practice your talents of singing and dancing. It has reassuring to see your work so hard at school and gain knowledge. You are an amazing daughter of our Heavenly Father. I hope you remember how much He loves you. How much WE love you. That you choose to turn towards your family and your Father in Heaven when you meet the challenged of life. We will always be here to support your.
