Every now and again the
starts align and Adam & I have a night together. Lately it’s been
the middle of the week when we are both worn out from work and everything else
going on, so we prefer a night in. A
Home cooked meal-catching up on our favorite shows together. So romantic, I know.
So when we had a Friday night
we decided it was time to go on an ACTUAL date!!! So a while back we decided it
was time to see the Kennecott Copper Mine. Rio Tinto and Kennecott advertise
the heck out of this place- have you seen their low emissions commercials? Since we attended the Real game on the 4th of
July, we got free admission for one car. So we headed up after I got of work.
Driving out to the mine was
fun. We had a chance to just talk, sing along to our favorite songs and have
some down time. When we got there we were SHOCKED at how much property Kennecott
owns & even more shocked to learn that it stretched up to salt lake, and
down to the point of the mountain and then west all the way to tooele. THAT IS
A LOT of land.
The “Pit” where they dig is
HUGE! And reminded me of our trip to Waimea canyon in Hawaii.
It is CRAZY to think that
they have been digging there for hundreds of years.
CRAZIER to think they can
dig for Hundreds more and still find copper.
ALL that PINK could be an
open pit mine some day.
After we stared into the
pit, walked through the museum, and felt a little guilty about the giant hole
that is being dug into mother earth, we soothed our conscience by going out to dinner.
There have been so many Ethiopian restaurants opening in Salt Lake we decided
it was time to try a new one.
We decided to head to Blue
Nile for dinner. It is a VERY foreigner friendly Ethiopian restaurant. They have
all American wait staff who will attempt to educate you on the menu, Ethiopian cuisine
and some cultural tips here and there. If you are an Ethiopian Native, don’t ask
for mitmita- they won’t know what it is. THERE are two Ethiopians in the back
cooking which made Adam feel better about the place.
We went with our usual- tibs
and doro wat & because theMR. tries it at every new restaurant, and order
of kitfo lub lub. Oh how we LOVE habehsa food! Sooooo delicious.
It was such a fun night! I love having time with my sweetie & exploring our great state!
